Salads tick all of those boxes. They're our go-to for those “I want something yummy but I also want zero effort” moments. We love the colours, the flavours, the textures, the way vegetables can make a plate feel bright and fresh without trying too hard. This Cucumber & Avocado Salad is exactly that kind of dish: crisp cucumber, creamy avocado, and a poppy-seed dressing that brings just the right amount of zing. It’s simple, it’s quick and it always hits the spot.
Ingredients
For the Salad
- Cucumbers - 250 gm
- Avocado - 1
- Mild red chilli, thinly sliced - 1
- Red onion, thinly sliced - 1
- Coriander, roughly chopped - ½ cup
For the Dressing
- Gramiyaa Wood Cold Pressed Sesame Oil - ¼ cup
- White vinegar - 2 tbsp
- Poppy seeds - 1 tbsp
- Sugar/honey - 1 ½ tbsp
- Salt & pepper to taste
Method
- Combine dressing ingredients in a small jar and mix vigorously.
- Slice cucumbers at an angle, about 1 cm thick.
- Peel and cut avocado in cubes.
- Mix the cucumbers, avocado and the rest of the ingredients in a large bowl. Add dressing 10 mins before serving. Taste and adjust for seasonings.
Serve cold!
